It comes down to amino acid metabolism. When amino acids from the diet or our skeletal muscle are metabolized within the liver, ammonia is produced. Normally, the liver works to convert this ammonia into urea and excrete in the urine (๐˜ต๐˜ฉ๐˜ข๐˜ฏ๐˜ฌ๐˜ด ๐˜ฌ๐˜ช๐˜ฅ๐˜ฏ๐˜ฆ๐˜บ๐˜ด!), but if you have super high levels of amino acid turnover, you can start to sweat out some of that ammonia before it can be converted.โฃ

So, high-protein diets and prolonged exercise sessions that lead to enhanced muscle breakdown can cause an ammonia smell, especially if you are also eating a low-carbohydrate diet since insulin reduces the amino acid load on the liver by promoting its uptake and storage into peripheral tissues like skeletal muscles and organs.
